Ingredients:
1 pound ground beef
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 jalapeño, seeded and finely chopped
1/2 cup salsa
1/4 cup sour cream
1 egg
1 tablespoon taco seasoning
1 cup shredded Mexican blend cheese
Salt and pepper to taste
Additional salsa and sour cream for serving
Instructions:
Preheat your oven to 375°F (190°C). Grease a loaf pan and set aside.
In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, chopped bell pepper, chopped jalapeño, salsa, sour cream, egg, taco seasoning, shredded Mexican blend cheese, salt, and pepper. Mix until well combined.
Transfer the mixture into the greased loaf pan, pressing it down firmly and shaping it into a loaf.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and golden brown on top.
Remove from the oven and let it cool for a few minutes before slicing.
