Ingredients:
Cajun seasoning
Poultry seasoning
Chicken broth
Onion
Green bell pepper
Garlic
Salt
Pepper
Instructions:
Season chicken liberally to your taste and refrigerate 1 to 2 hours up to overnight.
Preheat oven to 400°.
Spread chopped vegetables on bottom of baking dish, place chicken on top then pour 1/3 c. broth in bottom of dish .
Bake uncovered for a total of 45-50 minutes. At 20 minute intervals baste chicken with drippings in bottom of the pan.
