– 2 tablespoons olive oil
– 1 large onion, diced

– 1/2 teaspoon red pepper flakes (optional)

– 4 cups fresh spinach, roughly chopped
– 1 cup grated Parmesan cheese, plus more for garnish
– Fresh parsley, chopped for garnish
Directions:
