Delicious Homemade Potato Soup is a creamy and comforting dish that warms the soul with its rich flavors and hearty texture.
To prepare this soup, diced potatoes are typically simmered in a flavorful broth along with onions, garlic, and other seasonings until they are tender and cooked through. Some recipes may also include carrots, celery, or leeks for added depth of flavor and nutrition.
Once the potatoes are soft, the soup is often partially blended or mashed to create a thick and creamy base, while still leaving some chunks of potato for texture. Heavy cream or milk is then added to further enhance the creaminess of the soup, along with a generous amount of shredded cheese for extra richness and flavor.
The result is a velvety smooth and indulgently creamy potato soup that’s perfect for warming up on cold days or for enjoying as a comforting meal any time of year. Garnished with crispy bacon bits, chopped green onions, and a dollop of sour cream, Delicious Homemade Potato Soup is a satisfying and delicious dish that’s sure to become a favorite in any household.
Ingredients:
• 6 medium Russet potatoes, cut into bite-size pieces
• 1 onion, diced
• 3 carrots, peeled and sliced
• 6 slices of bacon, cooked and crumbled
• 8 cups of vegetable broth or chicken broth
• 1 cup milk
• ½ cup heavy cream
• 1 tsp minced parsley
• Salt and pepper to taste
• 3 tbsp flour (cornstarch can be substituted)
• 1 cup finely grated cheese of your choice
Instructions:
1. Cook the bacon in a soup pot until it’s crispy. Remove it from the pot and set it aside. Pour off most of the bacon fat, but leave some in the pot.
2. Return the pot to medium heat and add in the diced onion, celery, and carrots. Stir and cook for about two minutes.
3. Add the diced potatoes, salt, pepper, and any other seasonings you prefer to the pot. Stir everything together.
4. Pour in the broth and bring it to a low boil. Let it cook for about 10 minutes or until the potatoes begin to soften.
5. In a separate bowl, whisk together the flour and milk until smooth. Then add this mixture to the pot, stirring continuously.
6. Cook for an additional 5 minutes, allowing the soup to thicken slightly.
7. Carefully scoop out about ¼ to ½ of the soup and blend it until smooth in a blender or food processor.
8. Slowly pour the blended soup back into the pot, being cautious to avoid splashing.
9. Stir in the crumbled bacon, reserving some for garnish.
10. Serve the soup in bowls, garnished with parsley, bacon, and a sprinkle of cheese. Enjoy your homemade potato soup!
